Another day and another clean meal to add to the winter repertoire…
Baked eggs have become quite the fashionable addition to the brunch menu in most restaurants however it also makes a perfect vegetarian winter warmer which is packed full of protein.
Ingredients
4 eggs
2 tins of tomato
1 sachet of waitrose love life quinoa
Tsp cumin
Balsamic vinegar
Onions
Garlic
Bag of spinach
Ball of mozzarella

Method
1) chop garlic and onions and add to a large frying pan with coconut oil
2) add a tsp of cumin and a pinch of salt - brown the onions and garlic
3) add a splash of balsamic vinegar and add the chopped tomatoes. Simmer until sauce thickens. Add optional chopped chilli if you like a bit of heat
4) stir in a packet of pre prepared quinoa and mix into tomato mix.
5) put oven at 180c
6) when sauce is thickened add the bag of spinach to the mix. When leaves are mixed in place the mixture in a baking dish
7) layer the mozzarella in layers of the tomato mix
8) crack eggs on top sporadically over dish. With a spoon pierce holes so the eggs moves down through the mixture
9) grate a little Parmesan if you wish but not necessary
10) place in oven for 10-15mins
11) serve with blanched broccoli and pan seared carrots
Delicious and nutritious - high in protein and low in saturated fat
