Today’s Clean Eat – Eggar and Aubergine Salad

The sunshine has been out in the uk and the nights are getting longer which leaves more time to spend with friends, in the gym or out and about in the evening. The length of the evening leaves more time to indulge in life however this does leave less time to prep for your weeks clean meals and for me sometimes my own evening meal!

I have been using eggs ALOT recently – to the extent I now buy pure egg whites to reduce the amount of saturated fat in my weeks meals – and discovered this beautiful treat The Eggar. The French have omelettes, the Spanish tortillas, the Italians frittatas and Arabic nations have eggahs. Eggahs are delicious served straight from the pan or left to cool.
I made my Eggar using zucchini, chickpea and spinach. This spicy zucchini and chickpea version makes a great value lunch. It can be made in advance and keeps like a quiche and holds its flavour to be enjoyed again and again.

Alongside this I baked some aubergines with sundried tomatoes and garlic – drizzled with olive oil and half a cup of water. Aubergines keep really well for a couple of days and seem to bathe in their own flavour.

Perfect for a summers evening; you can enjoy this meal straight after work, post gym meal, as a quick a flavourful lunch or to share with friends. The Eggar slices like a pizza so this can be enjoyed as a gluten free and vegetarian alternative on a pizza night with friends and family!

So how do we make this:-
1) One Zucchini
2) One can of chickpeas
3) Cup of spinach
4) One garlic clove
5) 4 eggs and 2 egg whites ( you can use 6 eggs but this version cuts the cholesterol and sat fat down
6) tsp of cumin
7) tsp chilli
8) handful of parsley
9) low fat cheese (cheddar or feta)
10) one onion

Heat a frying pan (one that can be put under the grill) with a tsp of coconut oil. Add a thinly sliced onion – cook until softened. Grate the zucchini into thin slices and add to the pan.
In a separate bowl put the chickpeas, cumin and chilli (if you are feeling a little spicy I added a pinch of cayenne and smoked paprika at this point) once coated add to the frying pan with a crushed garlic clove. Place a lid on pan and leave – gently stirring – for 5-10 mins
Whisk the eggs (season) and add a tbsp of water. Turn on the grill
Add eggs to the mixture and keep on the heat till almost firm.
Grate the cheese and sprinkle on top and grill until bubbling and slightly browned.
Cut and eat!

To make the aubergines: – this will take a little longer so start this about 40 mins before eggar
1) 4 aubergine
2) 3 garlic
3) as many sun dried tomatoes as you like
Slice the aubergine length ways in to 4
Peel the garlics and crush with knife
Add tomatoes in-between layers of aubergine
Drizzle with olive oil
Bake until soft and then grill to add a little brown
This should last you 2-3 days and the flavours just keep getting better and better!
Voted by slimming world – the eggar is one of their extra easy sun free meals – so healthy, easy, can be made in advance and quite frankly delicious!

Today’s Clean Meal – Greek yoghurt, Pecans, Blueberries and Agave nectar

Hello folks! sorry I have not written in a while…I have been globe trotting in Santorini – which is where I discovered this delightful Breakfast…

Each morning Kula – our on site hostess would put together the most beautiful continental breakfast which included Greek yoghurt, pecans and honey – all local. It was creamy, delicious and went down like a treat. Nothing processed and no nasties.

Two days before travelling to Santorini I discovered through allergy testing that I am allergic to wheat. All my life I have felt funny after eating things like pasta – not getting that sensation of comfort most people got. Now I know why I can now make the right choices to nourish my body – and well – I started with this… (i swapped the honey for agave for those who prefer it)

All you need is:

  • 1 tub of 0% Greek Yoghurt
  • 1 punnet of Blueberries
  • Drizzle of Agave nectar
  • handful of pecans

It is pure delicious and great for morning or afternoon treat.

Todays Clean Eat Raw Vegan Chocolates

This week I decided to put myself on a detox after reading Kimberly Snyder’s Beauty Detox. http://kimberlysnyder.net/ Her philosophy is about aiding digestion to remove the energy and effort in order to use that energy for other areas of the body. She believes by relieving the stress of digestion the better and more beautiful the body will be.

I have had a bad tummy for a few weeks and dry skin so thought I would have a go at sorting myself out from the inside out 🙂 I have been having green smoothies, raw meals, veggies first and eliminating dairy ALTOGETHER! I am reducing the amount of animal protein I have on this diet as she says this uses a lot of digestive energy. I haven’t eliminated it altogether – as I am not quite prepared to step away from my love of some dishes…but for this week – once a day is my limit.

At Christmas my hippy dippy cousin gave me a raw chocolate making kit…I thought ohh that will be fun and completely forgot about it…whoops..so when I stumbled on them today I thought what an opportunity to try raw and whole ingredients to make these chocolates. The only cheat (in kymberlys eyes) is that I used Agave Nectar – but I wanted to keep them vegan – so I will have to deal with the slap on the hand.

Ingredients:

  • 80g Raw Cacoa
  • 100g Raw Cacoa Butter
  • 30g Lacuma Powder
  • 40ml Agave Nectar

Toppings:

  • Dried fruit
  • Himalayan pink salt
  • Chili flakes

Method:

Melt the cacao butter in a bowl over

hot water. Leave to cool off slightly. Mix the sifted powders into the melted butters. Sweeten to taste with nectar. Blend all ingredients together with wooden spoon. Place in ice cube tray or baking tray and add ingredients to flavour. Place in fridge to cool.

Today’s Clean Eat – Banana and Strawberry Smoothie

Finally the sunshine has come out and us lucky Great Brits can finally enjoy some sunshine.

I love the sun – it gives me that excuse to have beautiful fruits but also put on a bikini…always a bit scary when you have spent the last 4 months hiding under a jumper.

I have recently bought a house with a roof terrace – needs some work but is really starting to take shape now and hopefully will be used as my get-away from busy London life.

I decided to treat my cousin Rufus and my boyfriend Nicolas to a clean juicy treat while we sat in the sunshine…

Ingredients:

  • Banana x2
  • Strawberries – whole punnet
  • 1 tsp honey
  • Coconut water
  • Lots of Ice

Blend this all together and you are left with a strawberry and banana slush puppy! I put in extra ice as by the time you had sat with it for 2 minutes it had melted!

It was so refreshing and fruity and reminded me of a healthier version of the slush puppies you used to get as a kid 🙂

Todays Clean Eat – Asian Quinoa Salad x

Asian quinoa salad

 

This little treat you can make in advance and it will last you for about a week! yummy nutritious and full of colour

 

INGREDIENTS

1/2 cup quinoa
1/4 cup shredded red cabbage
1/4 cup grated carrots
1/4 cup corn kernels
1 green onion, thinly sliced
1 avocado, halved, seeded, peeled and diced
1/4 cup chow mein noodles, for serving

FOR THE SESAME VINAIGRETTE:
1/4 cup plus 2 tablespoons STAR Natural Rice Vinegar
1 clove garlic, pressed
1 tablespoon sesame oil
1 tablespoon sugar
1 teaspoon soy sauce
1 teaspoon grated ginger

INSTRUCTIONS
To make the vinaigrette, whisk together rice wine vinegar, garlic, sesame oil, sugar, ginger and soy sauce in a small bowl; set aside.
In a medium saucepan, cook quinoa according to package instructions.
In a large bowl, combine quinoa, red cabbage, carrots, corn, green onion and avocado. Stir in sesame vinaigrette.
Serve immediately, topped with chow mein noodles, if desired.

My mom visiting London from the Countryside to visit – and I thought this would be the perfect choice of modern, fresh and innovative cuisine to tantalise her taste buds on her first night in The Big Smoke.

We were guided to our table and within minutes were sat swirly a beautiful glass of local Soho Sauvignon Blanc. The cocktail list was inviting – with a selection of cocktails with “character”. The cocktail list was slit into sections “anti-depressants – cocktails with personality” and also “Alternative Therapies –just as fun but without the alcohol”… As my brother is on Stoptober – he settled in with a Shiso Fizz! A few little appetisers and we were ready to begin…

The menu was vast and we all concurred that if we all picked two dishes each – we could tell the tale via our taste buds in an abundance of sharers… The story began…

Each piece was delicately slice, every detail taken into account and the freshest of ingredients.

As I toured the restaurant watching the sushi chefs carve slices of delicate fish, flames bursting from the woks exploding flavours into the air to dance with your senses. You could see the variety, colour and freshness of the ingredients used and the meticulous care taken for each dish that was provided tour party.

I will recommend visiting the bathroom…but that discovery I will leave to you.

The food: delicate, full of flavour and perfectly fused
The wine: well selected and extensive choice
The service: tentative – at times a bit hard to get a drink
The bill: reflected the quality and standard of food while leaving us with a smile

Today’s Clean Meal

This evening I made a fritatta and my goodness it was delicious – it was the perfect sharer for me and my friends…and here’s a little secret – it tastes just as good the next dayy.

Chicken, Sweet Potato and Spinach Frittata 

Made with Love - Fritatta

Ingredients:

  • 800g orange sweet potato, peeled, chopped into 2cm pieces
  • 2 tablespoons chopped fresh basil
  • 8 eggs
  • Slices of Mozzarella
  • Salt & freshly ground pepper
  • 2 tablespoons olive oil
  • 300g cooked chicken, diced
  • 80g sun-dried tomatoes, roughly chopped
  • 50g baby spinach leaves
  • Side salad, to serve

Instructions:

  1. Step 1 – Place the sweet potato in a pan and boil in salted water till soft. Drain.
  2. Step 2 – Meanwhile combine basil, mozzarella and eggs. Season with salt and pepper.
  3. Step 3 – Heat the oil in 5cm deep, 26cm non-stick frying pan over a medium heat. Add the sweet potato and cook, tossing for 5 minutes or until golden. Add the chicken, sun-dried tomatoes and spinach, and toss until the spinach wilts.
  4. Step 4 – Preheat grill to high. Reduce the heat to low and pour over the egg mixture. Cook for 5-8 minutes or until almost set but still runny on top. Place the frying pan under the grill for 3-4 minutes or until golden and set. Serve slices with a side salad.

Its clean and delicious. To make it extra healthy and light – don’t add mozzarella and use egg whites for 4 out of the 8 eggs

Today’s Clean Eat – Sugar Detox

I decided to go on a sugar detox following all the recent articles on how much sugar we as a nation consume! It was phenomenal reading about all the sugar that is out there.

Big celebs are advocating it such as the new couple Millie and Professor Green.

I have been working out loads recently and wondering why my hours were not paying off – as they say its 80% nutrition and 20% exercise…

So lets get down to business – the detox

For three days no sugar:

  • no fruit
  • no wheat
  • no grains
  • no dairy
  • no sugar
  • no sweetener
  • no starchy carbs
  • no carbs

So to make it a little easier instead of listing what I can’t have I will list what you can

  • Protein
  • Good fat
  • protein and fat

Here is my meal plan for the 3 days

Breakfast: Two boiled eggs

Snack: M&S crispy bacon slices – 55g

Lunch: Itsu Chicken “low carb” on a bed salad

Snack: 100g of Smoked Salmon

Dinner: 150g of any meat or fish with cup of dark green veg

Drinks: Green Tea, Water, Fruit Tea, Lemon in hot water, Lime in Sparkling water

By the way – the above meals total to 1300 calories! I am hoping by the end of the detox my body will go in to Keytosis – which is where is burns fat for energy rather than glycogen (as there is no glycogen there).

Negatives of the sugar detox

  1. Seeing friends for dinner – you get weird looks
  2. 2pm in the afternoon – the haze/ brain fog
  3. When someone eats an orange next to you and it smells like someone orgasm’d in your nose
  4. Office temptations

Benefits of the sugar detox

  1. Sleep amazingly well
  2. NOT HUNGRY AT ALL
  3. No cravings “ohh I really want a piece of chocolate”
  4. After meals you are totally full
  5. If something is going to burn my fat for energy – crack on
  6. You get to eat a lot of meat – yum yum yum

I think I am going to extend my detox to a week and then after a week swap some of the “meat” snacks for blueberries or celery and hummus and incorporate more greens in my evening meals

Today’s Clean Eat – Basil Hummus Recipe

A quick little treat that I made as an afternoon snack before hitting the gym

It was delicious – dipped carrots and celery in (and maybe possibly a finger)

Here are the ingredients you will need to make a big batch 🙂

  • 1/4 cup pine nuts
  • 2 cups sweet basil leaves, packed
  • 3 cloves garlic, smashed then minced
  • 2 15-ounce cans garbanzo beans (chickpeas), rinsed and drained*
  • 1/4 cup olive oil
  • Up to 1/4 cup water
  • 1/3 cup fresh lemon juice
  • 1 1/2 to 2 teaspoons salt
  • Several dashes Tabasco
  • 1 teaspoon tomato paste

Blitz them all together using a handheld blender or in a blender and voila – a delicious afternoon treat

To make it go an incredible green colour – really go nuts with the basil leaves – unfortunately didn’t quite have enough in the house – but still tasted incredible

Todays Clean Eat – Breakfast and Lunch Preparation x

Clean Eating is the way to stay slim and fit in a world where most of us have a sedentary life.

It is very easy to go to and grab breakfast and lunch – but you do not know what other companies put in their food.

Lots of foods labelled LOW FAT are usually crammed so full of sugar – that when not burned – turns into FAT

Plan ahead and make sure you are ready to keep your fitness and slimming goals on point

Breakfast: Everyday I have a boiled egg and a banana for breakfast. You can pre make these little babies and crack them and peel them at your desk at your leisure. You can also make them up to three days in advance (Sunday planning)

For lunch I have mixed up:

  • 1/2 cup of Brown Rice
  • 100g of chicken or prawns
  • Cup of veggies

I keep these in the fridge at work and do them 4 days in advance

Take them out – pop in the microwave and voila – clean eating lunches!

All of which are under 250 calories!
