Making lunches can be so difficult when you are trying to eat healthy. Sometimes you open your lunch box and you have a bit of kale and quinoa looking up at you and you start to feel slightly depressed…
Well let me introduce you to Pollen + Grace this beautiful little company that serves gluten free, dairy free and free from refined sugar beautiful lunches to keep our stomachs happy and full of flavour.
I wanted to find out more about this wonderful company so I met with Steph the founder to have a Q&A
1) How was Pollen + Grace born – where did the idea come from?
Pollen + Grace came foremost from a love and passion for cooking healthy, delicious food but secondly from the frustration of never being able to find a healthy, free from lunch option when working in London and having to prepare lunch each night. 
2) What makes you passionate about Pollen + Grace, did you start by eating that way and became a passion…?
Pollen + Grace was such a huge risk to take, but it was something I(Steph) had to do as I felt it was what I was meant to do. I started eating this way due to gluten and dairy intolerances, then learnt how exciting it was to make delicious options that actually made you feel good. 
3) Who was your first customer?
Our first customer was the brand events office, but our first customer who found us without being a friend was Amanda Cauldwell – she would order 3 lunches a day from us, one for her lunch then two for dinner (one for her and one for her daughter)!
4) Where was your first pop up?
The Old Street pop up has actually been our first, but we definitely plan on doing more now!
5) Where are you based – how big is your team?
Our kitchen/office is based in clapham junction and we have a full time team of 6 now – 3 office and 3 kitchen!
6) What is your favourite product?
This one’s easy, definitely our paleo banana bread, it’s delicious!
7) If you could give people one piece of health advice – what would it be?
Focus on eating delicious wholesome food that makes you feel great, but learn that it’s also about balance – if you want the ice cream, eat the ice cream!

Protein Pancakes!


PROTEIN PANCAKES

Shrove Tuesday has landed and we are getting ready for a day of pancake indulgence…

But instead of filling your plate with grains, gluten and sugar – why not try two ingredient Protein Pancakes…

You will need: (per Pancake)

  • 1 egg
  • 1 banana
  • Scoop of Protein (I use neat protein)
  • Toppings of your choice (blueberries, cacao, raspberries, honey…nuts!)

 

Method:

Beat the bananas into a pulp and as this as possible using a fork.

Try and get out as many lumps as possible to ensure a better texture. Whisk the egg and add to the banana.

Heat a frying pan with some coconut oil.

If you’re feeling fancy add some blueberries into the mix when you put it in the frying pan.

Delicious Spinach and Aubergine Parmigiana


DELICIOUS SPINACH AND AUBERGINE PARMIGIANA

This little dish fills me with so much warmth. It is the perfect winter warmer which just keeps getting better. The ingredients cost little but the flavour is insane.

You can have it hot and eat it straight away or you can package this little delicacy up into some tupperware and take into work for a healthy treat.

My recipe has been updated to have all the flavour but less calories, hope you enjoy!


Ingredients:

2 x Aubergine
Glug of Mellow Yellow Rape Seed Oil
1x Red Onion
3 x clove Garlic
1 x 400g chopped Tomatoes
4x sprig of Basil
1/2 bag of Spinach
Splash of White Wine Vinegar
Grated Parmesan


Method:

Grab a griddle pan and heat up with a splash of Mellow Yellow Rape Seed Oil. Slice the aubergines and add to the pan to get a nice charred effect.

In another pan add another glug of Mellow Yellow Rape Seed Oil and chop the onions and garlic and add to the pan. Add some salt and pepper at this point and leave to soften. After 5-10 minutes add the spinach. Leave a few more minutes and add the tomatoes, basil and a splash of white wine vinegar and simmer to reduce.

Heat the oven to 190c and grab a over proof dish.

Take the charred aubergine and place a layer on the bottom. Add layers of tomato mix and aubergines until it is all used up. Sprinkle some parmesan on top of the mix for a nice crispy topping. This is up to you how much you add – but this is where the calories come from – so you can have too much of a good thing – however if you burn it off in the gym the next day – go nuts. 

Crack some black pepper on top and place in the over for 30 minutes

Leave to stand for 5 minutes before serving

A delicious meal to keep you warm this chilli winter. Perfect as a main with a side salad or to accompany some baked chicken.

In this recipe I have used Mellow Yellow Rapeseed Oil. Not many people know but using the right cooking oil has a big impact on health. Olive oil should be had cold and never heated. Coconut Oil can be heated but also leaves a subtle flavour. So I have been trying out this delicious cold pressed rapeseed oil. It has the lowest saturated fat content of any commonly available cooking oil – it contains less than half the saturated fat that is found in olive oil and is packed full of Omega 3. Mellow Yellow has a wonderful subtle nutty taste, it is ideal for salad dressings, while its high smoke point makes it perfect for high temperature roasting and stir-frying oil.

Neat Protein: Tasty, Vegan, Delicious and Nutritious

January 2016 has landed and the recurring conversation I am hearing around the office is which Health Plan people are joining. From Joe Wicks The Body Coach, Clean and Lean, That Sugar Diet to a whole host of plans that are swimming about there – people are really pulling their socks up to knock off that winter bulge.

However, when reading through the plans I hear people shriek!

THEY WANT ME TO ADD PROTEIN SHAKES!

Many of the plans contain protein shakes!

“Hang on a second isn’t that the stuff that body builders drink to make you bulky!”

No ladies it is not. Protein shakes help support you in enabling your body to build lean muscle when doing exercise and following a high protein diet plan.

Lean muscle is what makes you less wobbly and helps you work toward a bikini body with less jiggle and more wiggle.

Genetically we are not built to be body builders..so do not fret adding a protein shake to your diet will not end up with you waking up like Arnie!

So back to the protein shakes. The market is saturated with protein shakes that are FULL OF CRAP! Excuse my language but some contain all sorts of chemicals, sugars, artificial god knows what and taste like a chemical s**t storm.

I usually like to stay close to the Vegan Proteins as I find they are easier on the stomach and not full of animal whey (milk basically) so if you are trying to cut out dairy are better for you.

I had been to the gym after dinner and had a little itch for something before hitting the bed to keep my muscles going so I thought “why not”.

My Protein Shake Recipe

I had the Vanilla flavour (always my favourite as you can mix it with anything and the flavour suits) and I opened the sachet and emptied into my blender .

I added 250ml of Alpro Coconut Milk (20kcal per 100ml)

Then a massive hand full of ice

Finally a tsp of Vanilla Essence

It made two portions which I shared with my Boyfriend and we were gobsmacked how good it tasted. So gobsmacked I think I whatsapp’d my friends the world over to share the news!

Christmas Day has finished and now we are looking forward to the next big event of 2015…

NEW YEARS EVE 2015

Some of you may be heading back to work this week, but getting stressed about NYE should not be on your to do list… I’ve created a list of my top tips to get the ball rolling ready for the big night!

Right first things first:

#1 Have a breakfast to tackle the hangover

The best way to deal with over indulgence is to get some Asparagus in your diet.
Research to be published in the Journal of Food Science, Korean researchers found that extracts taken from the leaves and shoots of asparagus boosted levels of key enzymes that break down alcohol after heavy drinking!
So I recommend Poached Egg and Asparagus for Boxing Day!

 

#2 Get those 10,000 steps in

Wake up, chuck on those sweats (and if you’re still feeling festive your Christmas Jumper) and go out for a walk! Nothing too excessive you do not want to punish yourself. Grab your dog, mum, partner or headphones and just get the blood running and the calories burning. I cannot explain enough how important it is to do your 10,000 steps a day. Keeping slim was never so easy if you just keep moving.

While you are at work – make sure you head out in those lunch breaks this week. Walk to work. Walk around the office. Just keep moving. Sitting down is a sure fire way to keep the Christmas bulge longer than usual!

#3 Cheat with a waist trainer

You can buy one of these off amazon and create the perfect silhouette for your little black dress. Wearing this on a day to day basis also helps your posture and helps curve your body in and out in all the right places.

Wear it under your snuggly wear while catching up with family or if you are in the office… under your workwear. Completely invisible to anyone but you… this is a must for getting ready for NYE

#4 Clean up your diet

You have approximately 6 days to nail this. If you need a little help get James Duigan book which contains a 14 day guide to a flat stomach. This should be able to guide you in the right direction in order to give you a head start into 2016

Sneak some left over turkey for some lean protein. It features a lot in this book and will save you pounds while losing pounds.

#5 Get some sexy high heels

Heels elevate you up, slim down your legs, make your butt perky and all over give you a slender and confident look. Black strap look heels are my favourite things to hit A/W15. Edgy, cool and stylish these are the perfect addition to your wardrobe for NYE!

An Irish TV Host, she is  best known for shows such as: Total Wipeout, The Swan, Paradise Hotel, Sunday Brunch and The Big Breakfast.

On top of her TV accolades she is a pioneering role model for Positive Female Image and a Health and Fitness Blogger.

Stunning and Strong: Amanda is an amazing role model showing us ladies that at any age you can resonate your inner beauty.

Today I had the privilege of meeting Amanda and learning some health tricks from this gorgeous lady!

I am going to share them with you lucky readers…

Amanda started by sharing with us her journey to health starting off her early 20s to 30s – the story that is oh so familiar with many of us ladies out there… Thinking skinny = happy

As a model she sought for perfection. She thought skinny = healthy, skinny = happy, skinny = be all and end all.

This is the recurring message that seems to thrust upon all young girls much to our detriment.

She spent the majority of her 20s, and early 30s screwing up her metabolism by trying to be something she was not… as she put it “being thin is one thing, but being skinny when it is not your body type is a different thing altogether”. Years spent on popcorn, slim fast, over exercising and fat free items. . . thinking this would make her skinny and healthy.

I looked around the room – to multiple heads bobbing up and down – guilty!

Fed up with struggling with her body image she hit a point in her 30s when she decided to switch things around and get educated on food!

“We are just not as educated as we need to be”

She went on to explain that as a world we do not nourish ourselves right. We have silly notions that fat is bad for us, carbs are the devil and sugar seems to be popping its toxic head up everywhere!

“Good fats were good for me – they were helping me to lose weight”

Her relationship with food and good foods was changing. She re-educated and was reaping the benefits.

“Good carbs were good for me – no carbs before marbs is rubbish”
A giggle echoed around the room

Amanda went on to explain “Good fats, good protein, good carbs and good fibre… we need these things to exist”
You could hear the passion in her voice and it was infectious

“Physical health is one thing but mental health also needs to be important”

“So much pressure put on ourselves “to be the best girlfriend, mother, wife, career woman” “to do do do”

“we get so obsessed with being ‘on it’ we don’t see the wood for the trees and we end up miserable”

I could hear my inner voice saying “listen” and listen good – these pressure I put on myself and I think most modern women do too. We ignore what we truly need and ignore the most important fact that all round health starts with our choice of fuel!

So how did Amanda become a 9bar Ambassador?

Well, Amanda explained, her handbag is always full of nuts and seeds in – friends calling her the “nutty seed lady” – so when she was approached by a brand she was all to familiar with… she was more than happy to help spreading the seed sensation!

Her parting thought… not only left me smiling but also added a new word to my dictionary…

Anti-Inflammatory Squash and Lentil Coconut Curry

This dish is perfect to make on a Monday and keep tucking into for the next few days

Difficulty: Easy
Storage: Fridge 3-5 days
Travel to work: In Tupperware
Heat: Microwave

This is a perfect anti-inflammatory dish. Inflammation is incredibly important. It helps the body fight foreign invaders and also has a role in repairing damage. Without inflammation, pathogens like bacteria could easily take over our bodies and kill us. Although acute (short-term) inflammation is beneficial, it can become a major problem when it is chronic (long-term) and inappropriately deployed against the body’s own tissues.
It is now believed that chronic, low-level inflammation plays a major role in almost every chronic disease. This includes heart disease, cancer, metabolic syndrome, Alzheimer’s and various degenerative conditions.

Therefore, anything that can help fight chronic inflammation is of potential importance in preventing and even treating these diseases.

This dish contains Tumeric and Ginger: to highly regarded anti-inflammatory foods.
It is also vegetarian – so rates highly to keeping an alkalised ph in your body

Ingredients:

  • 1 butternut squash
  • 7 cloves garlic
  • Knob fresh ginger, grated or finely chopped
  • 3 red onions
  • 2 white onions
  • 2 tsp or more tumeric
  • 300ml of chicken stock
  • 500g red lentils
  • 1 tsp black pepper and Salt
  • 1 bar creamed coconut
  • 1 can of coconut milk
  • Spinach or Seasonal Greens (1 bag)
  • 1 lemon
  • coriander
  • Spring onions
  • Fresh chilli

Method:

  1. Peel the squash and dice into chunks and place into the pan with the garlic, onion, ginger. Sizzle until onions are browning and the squash starts to ever so slightly soften. Add the creamed coconut, coconut milk and chicken stock. Simmer
  2. Simmer for 10 minutes, add the red lentils, black pepper, turmeric and chilli if using, stir and let simmer on medium for a further 15-20 minutes until the lentils are soft.
  3. Add more water if the consistency is too thick.
  4. In the last few minutes, add the greens and stir through.
  5. Turn off the heat, add the sea salt and pepper, the juice of a lemon.
  6. Stir through the roughly chopped coriander and sprinkle spring onions on top to serve

Eh Voila – Delicious and Nutritious!

Maximising your Metabolism

We all have those events when you are looking to drop a few pounds or get ready for a holiday. We go in with high hopes only to hit 11am and the morning stomach grumble is there.

I have recently trialled out Arbonne Evolution Set 

Now for people who know me – will know that I am not a big supplement person. I have the mentality of “if you can grow it or kill it then you can eat it” but after having a long conversation with the consultants at Arbonne I agreed to try this product out as part of my prep towards my up-coming holiday.

So what is it:

The set is made up of a Tablet and a Powder.

The Tablet:

Ingredients include green tea extract and green coffee bean extract. These are both extracts that some of the Made in Chelsea crew have advocated for their slimming. Unlike other caffeine based tablets – this one did not leave me with the shakes. In fact I didn’t really notice much. However, my normal cravings around 11 and 3pm had diminished. With all other factors in my life being equal I have to hold my hands up and maybe say this could have been the reason.

The Powder:

The powder I would liken to Crystal Lite if you have tried it. You mix the Kiwi- Watermelon flavoured powder into water and neck really quickly half an hour before food. I had mine first thing in the morning as I made my morning green smoothie. The ingredients contain Glucomannan which is given to people with type 2 diabetes for blood sugar control. As it helps reduce spikes in your blood sugar this also helps reduce those intense cravings that low blood sugar can cause. What I would say here tho… reduce your sugar and have low gi foods and this will also reduce those pangs. As with the tablets with all factors remaining equal I noticed that I was only eating three meals a day. My need to snack had significantly reduced and when I was hungry I was not having those little voices in the head to go the naughty treats in life…it was general hunger for nourishing food.

As I have said before – I am usually not an advocate for these types of supplements but I am pleasantly surprised.

The consultants I worked with Maysoun (maysoun_wahbeh@yahoo.co.uk) and Victoria (victoriafan@live.co.uk) kept in contact with me throughout my trial. They offered advice and their own experience and sent me fact sheets when I questioned more about the products.

If you do need a little helping hand for keeping the cravings at bay when starting a new phase to become a healthier version of you… I would recommend speaking to Arbonne or these girls. My questions were answered, there was a face to the product and no worries that something nasty may be arriving at the door which can often happen when purchasing products off the internet.

With less oxygen available in the air and less oxygen therefore circulating in your blood, the body makeso captive changes as to how it uses oxygen as well as its available energy stores.
The main benefits are an increase in lung capacity, energy production, anaerobic threshold, mental focus as well as re-training the way you breathe during high intensity workouts.

This is extreme!

I began my workout with high hopes for my fitness level. That and I also thought I looked awesome in this gang style mask which was a cross between predator and some inner city motorbike organised crime gang!

Jokes aside…within minutes I was seeing the colour of my face change, by heart beat was racing, my head was light and “glowing” doesn’t quite describe the level of perspiration.

However, in true stubborn nature, I continued the workout. You are told at any point you are able to remove the mask but I wanted to see if I could do this… with or without Oxygen.

45 minutes and approximately 1000 calories down

I reached the end of my workout. There were times during it when I thought I could not continue. Everything was being challenged from my brain, co-ordination, muscles and breathing – it really engaged my whole body in way no other exercise I had tried before. The Personal Trainer encouraged me at every second pushing me when I needed the encouragement and providing the very needed countdowns to take me to the end of each circuit. At times I wanted it to end – but the positive vibes and the boosts motivated me to push through to the final 45 minutes.

Ending with sprints on the bike – the burn set in.

My body had been pushed, my fitness level questioned and my endorphins rushing! I had never experienced this kind of push before. I was exhilarated and exhausted both at the same time.

Have you heard of Blue Brick Cafe? No? Well, that’s ok cus’ neither had I!

Well, that was until I went for a beautiful Autumn Stroll with one of my favourite ladies, Claire.

She and I often take to the parks of London on the weekend to meander and discover as we go. This weekend after a beautiful Sober October Stretch at HotPodYoga we ventured out of Lambeth via Brockwell Park to go and explore the neighbouring Boroughs.

We found ourselves hungry and in search of food on Lordship Lane in Southwark. The quaint little street is littered with shops that are perfect for browsing – I would highly recommend for a stroll on the weekend.

Anyway back to the hunger…

We started making our choices when we saw a little blue sign with had an arrow… Blue Brick Cafe it then stated it sold Vegetarian food – which was what we were looking for. We took the risk and decided if it looked rubbish we would carry on… Thank Goodness we did!

We poked our head into this cute little cafe. The design was like a garden picnic with a mismatch of wooden furniture which added great character.

The staff were welcoming and warming as they advised us through the menu.

In true style, neither of us could come to a decision so we decided to get two things and share.

We opted for the Halloumi Salad with fennel, apple and salad

Followed by the Tomato and Ginger Vegetable Curry

Both were beautifully presented with edible flowers. The Halloumi Salad dressing was divine! The curry was perfect.

The grand total of the bill was less than £14 – winner 


The ethos and character of this bistro really attracted me…

If you are looking for a winter warmer, in a beautiful cafe that is full of charm I would highly recommend visiting.

Eat Yourself Young – Elizabeth Peyton-Jones

If someone told you that you could make some small changes to your life that would make you look and feel younger, rejuvenated and alive… Would you not jump at the chance?

If you are ready to make a change then I think it is about time you went and read Eat Yourself Young
and Cook Yourself Young by Elizabeth Peyton-Jones

I discovered this book while researching how what happens in the gut affects the entire body. I was then fortunate to find myself attending a talk with Elizabeth, where I was able to hear first hand, how making small changes to how you nourish your body can really change how you look and feel.

Here is what happened when I met Elizabeth…

Elizabeth  (a natrupath and Master Herbalist) explained how 70-80% of the problems she treats with her clients is solved by a change of diet. Not a special pill, not cream, not voodoo… just food.

(at this point my ears truly pricked up)

She went on to explain that people have now become emotionally involved with food rather than just eating for nutrition. “When you become emotionally attached to food, you can’t make good decisions” – what she is referring to here is that morning coffee that has to be part of your routine… rather than waking up and identifying why you are tired you are associating a feeling with it. This goes for chocolate or other the sugary snacks you see as a “pick me up” in the afternoon in the office. She went on to explain “if it is emotional, it is addictive and it is not good for you” Instead of thinking about food as merely a means to a nourishing ends we are associating an emotion which is not beneficial.

(Interesting… Guilty!)

Elizabeth continued to explain what is making us old:

  1. Acidity
    2. Inflammation
          3. Digestive Problems 
                 4. Oxidation
                        5. Hormones

Each one of these is highlighted in her book and explains how they are affecting your bodies youthing abilities.

She went on to explain how our body sends signal to us – most of which we ignore or we medicate rather than dealing with the issue head on. All of us at some point will be affected by the 5 issues listed above. In what way and to what degree is all personal.

She went on to explain the top 3 to really focus on if you want reach your full potential

Acidity

When the body is acidic your body is not happy. Like fish, our bodies happiest state is at alkaline. The foods which are acid-forming in our body are: Meat, Dairy, Alcohol, Caffeine and Sugar – no surprises there really.
Our body draws on our natural minerals to alkalise these – thus pulling minerals from our teeth, hair, nails and bones.
This leads us to looking and feeling lifeless…

So what does Elizabeth say the top 3 things you can start doing to change this:
+ Lemon and Water 
+ Green Juices (try and go no fruit)
+ A plate of vegetables everyday

In her book she goes on to tell you how to cook to draw the most nutrition from vegetables and how to affectively alkalise your body without feeling like you are giving up the things you love. Simple changes to make a glowing you!

Inflammation

Inflammation is when your body swells to warn you. This could be in your mouth from allergies all the way down to your stomach. The latter is the harder one to identify. When your body has an allergy you may not even notice – there are subtle signs such as sniffing or coughing after/ during a meal, bloated-ness, and other little signs which we as humans so cleverly ignore.

In her book she gives a list of ailments and potential causes. If you think you have an allergy (or maybe you have no idea) it is definitely worth a look.

Tricks for dealing with Inflammation are: Ginger and Tumeric
She went on to explain that anything labelled with “itus” is an inflammation… e.g. tonsillitis
Which can be treated by alkalising the body and introducing these anti-inflamatory foods rather than guzzling down anti-biotics or other pharmaceutical drugs

Oxidation

Protecting yourself from the free-radicals. Making sure your diet is rich in anti-oxidants to fight the daily interactions with free radicals which age our cells from the inside out.

I am not going to re-write the book but I would highly recommend you look this lady up. Her website EPJHealth provides a plethora of information to get you started on your quest to transform yourself into the most vibrant version of you!
